sorry for a delay answere, but there is problem with the forum.
yes, with SPAD-NEXT you can configure both outputs and inputs, it just requires the appropriate cards. I use the LEO BODNAR BBI64 and BUO836X cards for the INPUTS, they are the same for the inputs, except that with the BUO836X you can also have the possibility of programming 8 potentiometers.
for the outputs I use the ULTIMARC placled 64 cards. As far as I know they are the only 2 cards that can be used with SPAD-NEXT. Lately I know that you can also use Arduinos but I've never done it.
lastly I use the Arduino boards as I told you (the MEGA2560) with lua and mobiflight scripts, but only as I told you for the analog gauge.

I'm glad you purchased the Majestic Dash8, also because I think it's the best SIM on the market regarding the Bombardier Dash8 Q400.
to answer your questions:
1) I exclusively use SPAD_NEXT as an interface, except for the analog instruments (pressurization, deice press L and R, and oxigen) for those I had to create a special Lua script which is read by majestic via mobiflight
2) I use UDP 4 for the interface of the efis displays, the FMC displays and the ARCDU displays.

I too am moving forward in small steps and as your beta tester I hope in my own small way to be of help to you in your splendid project.
I hope you appreciate the work resulting from years of design and construction, the pedestal with throttle quadrant and yoke is missing and it is finished.
a special project will go after the creation of the HUD which would be the "CHERRY ON THE CAKE" as we say in Tuscany,
hgs and achievable right now, as I told you in the post the HUD will be the problem to solve.
